Vegetarian delight : Baby Corn Paneer Curry

Ingredients:
12 baby corns, cut into 4, lengthwise
1 1/4 cups paneer (cottage cheese)
1/4 tea spoon cumin seeds
1/8 tea spoon asafoetida
1 tea spoon fresh ginger-green chilli paste
1/2 green capsicum, cut into 25 mm (1 inch) strips
1/2 red capsicum, cut into 25 mm (1 inch) strips
1/4 tea spoon turmeric powder
1 fresh tomato
2 table spoons oil
Salt to taste
For the garnish:
2 table spoon chopped corriander
Serves: 2 - 3 persons

Method:
Cut roughly and blend the tomato to a smooth puree.
Heat the oil in a non-stick pan, add the cumin seeds and asafoetida. When they crackle, add the ginger-green chilli paste and green and red capsicum and sauté for 2 minutes.
Add the baby corn, turmeric powder and salt and saute on a slow flame for 4 to 5 minutes till the baby corn is cooked.
Add the tomato puree, paneer and toss lightly.
Serve hot garnished with coriander
